Ingredients
- 5 pounds boneless, skinless chicken breasts or thighs, pounded to 1/2-inch thickness if using breasts
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried Italian seasoning
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
- 2 cloves garlic, minced
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese (optional, for serving)
Instructions
- Season chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
- Reduce heat to medium. Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour in chicken broth, scraping up any browned bits from the bottom of the pan.
- Stir in heavy cream and chopped sun-dried tomatoes. Bring to a gentle simmer.
- Let the sauce simmer for 3-5 minutes, stirring occasionally, until it thickens slightly.
- Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Return the cooked chicken to the skillet, nestling it into the sauce. Simmer for another 2 minutes to heat through.
- Serve immediately, optionally garnished with grated Parmesan cheese.
