Why this recipe matters

Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/4 cups buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla bean paste or vanilla
  • Butter for greasing the griddle/pan
  • Optional: Maple syrup, fresh fruit, or whipped cream for serving

Instructions

  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  2. In a separate medium bowl, whisk together the buttermilk, egg, melted butter, and vanilla bean paste or vanilla.
  3. Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or spatula until just combined. A few lumps are okay; do not overmix, as this will make the pancakes tough.
  4. Heat a lightly greased griddle or non-stick pan over medium-low heat. (If a drop of water sizzles and evaporates quickly, it's ready).
  5. Pour about 1/4 cup of batter per pancake onto the hot griddle. Cook for 2-3 minutes per side, or until bubbles appear on the surface and the edges look set.
  6. Flip the pancakes and cook for another 1-2 minutes, until golden brown and cooked through.
  7. Transfer cooked pancakes to a plate and serve immediately, or keep warm in a low oven while you cook the remaining batter.
  8. Serve with your favorite toppings like maple syrup, fresh fruit, or whipped cream.
