About this recipe
Conquer your first Thanksgiving with this easy-to-follow guide for a juicy, herb butter roast turkey that's bursting with flavor.
The thought of roasting a whole turkey can feel a little daunting, can't it? For many years, the idea of preparing that centerpiece holiday meal filled me with a mixture of excitement and sheer terror. Would it be dry? Would it be flavorful? Would it even cook through properly? I remember one year, my turkey turned out looking like it had spent too much time sunbathing without any sunscreen â dark on the outside, but surprisingly undercooked in places. It was a learning experience, to say the least!
But through those trials, I discovered some truly game-changing techniques, and today, I'm so excited to share with you the recipe that has become my absolute go-to for a perfectly juicy, incredibly flavorful, and beautifully golden-brown roast turkey every single time. This isn't just about cooking a bird; it's about creating a memorable meal, a centerpiece that gathers everyone around the table, and a dish that truly celebrates the spirit of togetherness. So, take a deep breath, shed those turkey-roasting fears, and let's get ready to make the most delicious herb-butter roast turkey you've ever tasted!
Ingredients
- 1 (12-14 lb) whole turkey, thawed if frozen
- 1/2 cup unsalted butter, softened
- 2 tablespoons fresh sage, finely chopped
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme, finely chopped
- 2 cloves garlic, minced
- 1 large yellow onion, quartered
- 2 carrots, roughly chopped
- 2 celery stalks, roughly chopped
- 1 lemon, halved
- 4 cups chicken or turkey broth, plus more if needed
- 2 teaspoons salt
- 1 teaspoon black pepper
Instructions
- Prepare the Turkey: Remove turkey from its packaging and remove giblets and neck from the cavities. Pat the turkey very dry, inside and out, with paper towels. This is crucial for crispy skin.
- Place the turkey on a rack in a large roasting pan.
- Make the Herb Butter: In a small bowl, combine softened butter, chopped sage, rosemary, thyme, minced garlic, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix well.
- Apply Herb Butter: Gently separate the skin from the breast meat using your fingers, being careful not to tear it. Rub about half of the herb butter mixture directly onto the breast meat under the skin. Spread the remaining herb butter all over the exterior of the turkey.
- Sprinkle the remaining 1 teaspoon salt and 1/2 teaspoon black pepper over the outside of the turkey.
- Stuff the Cavity (Aromatics Only): Place the quartered onion, chopped carrots, chopped celery, and lemon halves inside the turkey cavity. Do not overstuff, as this can prevent even cooking.
- Tie the turkey legs together with kitchen twine and tuck the wing tips under the body to prevent them from burning.
- Pour 2 cups of chicken or turkey broth into the bottom of the roasting pan.
- Roast the Turkey: Preheat oven to 325°F (160°C).
- Roast the turkey for approximately 3-3.5 hours, or about 15-20 minutes per pound, basting every 45 minutes with the pan juices. If the pan juices evaporate, add more broth (about 1 cup at a time).
- If the skin starts to brown too quickly, loosely tent the turkey with aluminum foil.
- The turkey is done when a meat thermometer inserted into the thickest part of the thigh (without touching bone) reads 165°F (74°C).
- Rest the Turkey: Once cooked, remove the turkey from the oven, cover it loosely with foil, and let it rest for at least 20-30 minutes (up to 45 minutes) before carving. This allows the juices to redistribute, resulting in a much juicier bird.
- Carve and Serve: Carve the turkey and serve immediately with pan drippings or gravy.
