Ingredients

  • For the Dough:
  • 1 cup warm whole milk (105-115°F / 40-46°C)
  • 2 and 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • 3 to 3 and 1/2 cups all-purpose flour
  • For the Filling:
  • 1/2 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 2 tablespoons ground cinnamon
  • For the Cream Cheese Frosting:
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 and 1/2 cups powdered sugar
  • 1/2 teaspoon vanilla bean paste or vanilla
  • 1-2 tablespoons milk or cream, as needed

Instructions

  1. Make the Dough: In a large bowl, combine warm milk, yeast, and 1 tablespoon of the granulated sugar. Stir gently and let sit for 5-10 minutes until foamy.
  2. Add the remaining granulated sugar, egg, melted butter, and salt to the yeast mixture. Whisk well.
  3. Gradually add 3 cups of flour, mixing with a wooden spoon until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 5-8 minutes, adding more flour a tablespoon at a time if the dough is too sticky, until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, turning once to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. Prepare the Filling: While the dough rises, in a small bowl, cream together the softened butter, brown sugar, and ground cinnamon until well combined.
  6. Assemble the Rolls: Once the dough has risen, punch it down gently and turn it out onto a lightly floured surface. Roll the dough into a large rectangle, about 12x18 inches.
  7. Evenly spread the cinnamon-sugar filling over the entire surface of the dough, leaving a small border on one long edge.
  8. Starting from the opposite long edge, tightly roll the dough into a log.
  9. Trim the ends, then cut the log into 12 equal slices (about 1.5 inches thick) using a sharp knife or unflavored dental floss.
  10. Arrange the rolls in a greased 9x13 inch baking dish, leaving a little space between each.
  11. Cover the dish with plastic wrap or a clean kitchen towel and let rise again in a warm place for 30-45 minutes, or until puffy.
  12. Bake the Rolls: Preheat oven to 375°F (190°C).
  13. Bake for 20-25 minutes, or until golden brown and cooked through. If tops brown too quickly, loosely tent with foil.
  14. Make the Cream Cheese Frosting: While the rolls bake, in a medium bowl, beat softened cream cheese and softened butter with an electric mixer until smooth and creamy.
  15. Gradually add powdered sugar, beating until smooth. Stir in vanilla bean paste or vanilla. Add milk or cream, 1 tablespoon at a time, until the frosting reaches a smooth, spreadable consistency.
  16. Frost and Serve: As soon as the cinnamon rolls come out of the oven, spread the cream cheese frosting generously over the warm rolls.
  17. Serve immediately and enjoy!
