Why this recipe matters

There's just something about autumn, isn't there? The crisp air, the changing leaves, and that undeniable urge to bake. For me, that urge almost always leads to pumpkin bread. It's more than just a quick bread; it's a feeling. It’s the smell that fills your kitchen, warm and inviting, hinting at comfort and coziness. This recipe for moist pumpkin bread with warm spices isn't just another item to check off your fall baking list; it's a tradition in the making.

Ingredients

  • 1 (15 ounce) can pumpkin puree (not pumpkin pie filling)
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup vegetable oil (or melted unsalted butter)
  • 2 large eggs
  • 1 teaspoon vanilla bean paste (or vanilla)
  • 5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped pecans or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or line with parchment paper.
  2. In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla bean paste until well combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, ginger, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. If using, gently fold in the chopped pecans or chocolate chips.
  6. Pour the batter into the prepared loaf pan, spreading evenly.
  7. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the pumpkin bread cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
  9. Slice and serve. Enjoy!
